Yummy Golden Pancakes

This recipe is to die for!  It’s delicious, super healthy and low in fat, and as easy as 1,2,3 to make!!!  Eat a few without feeling an ounce of guilt!  ENJOY!!

Servings: 2

INGREDIENTS

1 cup uncooked whole-grain oats

6 Egg whites

1 cup fat-free cottage cheese

1.4 tsp vanilla extract

1/4 tsp ground cinnamon

2 packets sugar substitute

1/2 cup sugar-free maple syrup

1/4 cup mixed berries

DIRECTIONS

1. Lightly coat a nonstick skillet or griddle with cooking spray and place over medium heat.

2. In a blender, put all the ingredients together except for the syrup and berries and blend on medium speed until smooth, about1 minute.

3. Pour 1/4 c of the pancake batter into a hot skillet.  Cook it for about 3 minutes or until you see bubbles forming on top and it becomes dry around the edges. Turn and cook the other side for about 2 more minutes or until golden brown.

4. While waiting on the pancakes to cook, microwave the maple syrup for a few seconds or until warm.

5. Stack the delicious pancakes on a plate.  Serve with mixed berries and maple syrup.
